
The WhistlePig Distillery was founded by Dave Pickerell in Vermont in 2008. A year earlier, the team around the owner acquired a rye farm. Dave Pickerell passed away in 2018. Since then, the distillery has been run by Emily Harrison and Meghan Ireland.
Whistlepig 12 years matured first in fresh in fresh American white oak barrels (Virgin Oak) and then matured in former port, Sauternes and Madeira barrels. Bottled with 43% alcohol by volume, without colorant.
Aroma: Deep sweetness with honey and stewed fruit, dark dried fruit and dry spicy oak.
Taste: Aromatic rye notes with mint, sweet honey, dried apricots and figs, dry and spicy.
