The origin – A protected specialty from France

Only spirits from the officially designated Cognac region in France may bear the name Cognac. This region is divided into six crus:

  • Grande Champagne – Fine and complex with a long maturation period
  • Petite Champagne – Similar to Grande Champagne, but slightly more accessible
  • Borderies – Soft, floral with characteristic violet aromas
  • Fins Bois – Fruity and soft, ready to drink early
  • Bons Bois & Bois Ordinaires – Stronger in character, with maritime notes

These unique terroirs give each Cognac its individual flavor – from soft floral notes to deep, spicy aromas.

From the grape to the bottle – The art of cognac production

1. The grape harvest

The Ugni Blanc grape dominates cognac cultivation, as its high acidity and freshness provide the perfect base for distillation. Folle Blanche and Colombard complement the spirit with additional fine aromas.

2. Fermentation & Distillation

The resulting white wine, with an alcohol content of 7-9%, is distilled twice in traditional Charentais alembic stills. The result is a high-proof raw spirit (up to 72%), which is then aged in barrels.

3. Barrel storage – time as the secret ingredient

Oak barrels from Limousin or Tronçais give cognac its color and rich aromas. During maturation, a portion of the alcohol evaporates—the so-called "angel's share." The longer the cognac rests, the more complex its flavor becomes.

4. Assemblage – The high art of composition

Cognac is often a blend of different vintages and crus. The cellar master selects the perfect blend to achieve a harmonious balance of fruitiness, spice, and depth.

Cognac classifications – What do VS, VSOP and XO mean?

  • VS (Very Special) – Aged for at least 2 years, fresh and fruity
  • VSOP (Very Superior Old Pale) – Matured for at least 4 years, complex and balanced
  • XO (Extra Old) – Matured for at least 10 years, full-bodied and profound
