The Stauning Distillery was founded in 2005 in the town of the same name in Denmark. Production began in 2009, initially with 60,000 pure alcohol per year. After Diageo acquired a stake in the distillery, the facility was expanded and the output increased to 750,000 pure alcohol per year. Stauning malts the rye for production and uses peat and heather in places for drying.
Stauning Rye matured for an unspecified time in American Virgin Oak barrels and was finished in Oloroso & Moscatel Sherry barrels.
Bottled with 53.1% vol. alcohol, without coloring and not chill-filtered.
Aroma: Sweet aromas of vanilla, toffee and meadow honey. Plus fruity notes from the sherry casks.
Taste: Seville orange, fennel and tobacco. Black tea and Demerara sugar complement the fruity and spicy components.
