The Locher family has operated its brewery in the Appenzell region since 1886. Until 1999, it was illegal in Switzerland to produce spirits from potatoes or grain. After the law was repealed in 1999, the Locher brewery began producing its own whiskey, which they call Säntis Appenzeller Malt. This whiskey is matured in oak barrels that had previously held beer.
Säntis Edition Dreifaltigkeit matured for an unspecified period in former beer barrels. Bottled at 52% ABV, without coloring and without chill-filtering.
Aroma: Smoked bacon and ham, sweet with herbs and spices, dry and woody.
Taste: Honey-glazed ham, smoked bacon, herbal candies and nutty oak.
