The Locher family has been running their brewery in the Appenzell region since 1886. Up until 1999, it was forbidden in Switzerland to make spirits from potatoes or grain. After the law was repealed in 1999, the Locher brewery began producing their own whiskey, which they call Säntis Appenzeller Malt. By default, this matures in oak barrels that previously contained beer.
Säntis 7 Years Edition Alpstein XV first matured the entire time in former beer barrels and then received post-maturation in Pinot Noir barrels. Bottled at a strong 48% ABV. Alcohol, without coloring and not chill-filtered.
Aroma: Reminiscent of beer foam, plus vanilla, toffee, baked apples and pears.
Palate: Soft, spicy wood, apple pie, sweet spices, nuttiness
