The Locher family has been running their brewery in the Appenzell region since 1886. Up until 1999, it was forbidden in Switzerland to make spirits from potatoes or grain. After the law was repealed in 1999, the Locher brewery began producing their own whiskey, which they call Säntis Appenzeller Malt. By default, this matures in oak barrels that previously contained beer.
Säntis Edition Himmelberg first matured in former beer barrels for 4 years and then received post-maturation in wine barrels. Bottled at 43% vol. Alcohol, without coloring and not chill-filtered.
Aroma: Red berries, pithy, tart grain, mild sweetness with a hint of oak.
Taste: Fruity with pears, red berries, sweet vanilla, robust malt, dry wood.
