Noah's Mill traces its roots to the Willett Distillery in Bardstown, which was first opened by the Willett family in 1936. Born in 1841, John David Willett was the first family member to enter the whiskey business. He worked as a master distiller at various distilleries in and around Bardstown. The following generations kept the tradition alive. In 1936, brothers Johnny and Thompson Willett founded the Willett Distilling Company. They built a distillery on the family farm and produced their first whiskey in March 1937. After closing in the 80s, the distillery has been operating again since 2012.

Noah's Mill matured for an unspecified period of time in fresh American white oak barrels. Bottled with a strong 57.2 vol. % alcohol, without coloring.

Aroma: Spice and sweetness mixed with earthy and mineral notes, hints of ripe fruit and chili peppers.

Taste: Spicy with black pepper, sweet with vanilla and leathery notes, dry oak and some cinnamon.
