When the Kilchoman distillery opened in 2005, it was the first new distillery on the Scottish island of Islay in 124 years. Kilchoman places a relatively high emphasis on regionality and craftsmanship. A portion of the barley used in production is grown near the distillery and kilned on its own malt floors. The Scotch matured in first-fill bourbon barrels from 2010 to 2024 and, according to the label, is 13 years old. The distillery bottled it with a peat content of 50 ppm and an alcohol content of 54.5% by volume. It has a striking natural color, is non-chill-filtered, and only 248 bottles are available for purchase.
Aroma: This 13-year-old whisky has a peat smoke characteristic of the Islay region. It also smells of sweet toffee, and salt adds a maritime touch.
Palate: The Kilchoman Sister Cask Whisky is creamy and sweet on the palate. Its full-bodied taste is maritime. Vanilla and caramel are present. Oak and peat smoke lead the way on the finish.
