The High West Distillery was founded in 2006 by David Perkins, a biochemist and his wife Jane. Inspired by the fermentation and distillation process and the parallels to biochemistry, David Perkins decided to create his own distillery. In 2004 he and his family moved to Park City, Utah to start their new business. Distillation began in 2007.
High West Campfire matured for an indefinite period in a combination of ex-bourbon casks and fresh American white oak (Virgin Oak) casks. Bottled at 46 vol. % alcohol, without coloring and not chill-filtered.
Aroma: Floral and fruity with a mix of spicy and sweet, burnt oak, citrus.
Palate: Sweet with toffee and honey, dark berries, hints of tobacco and leather.
