The High West Distillery was founded in 2006 by David Perkins, a biochemist and his wife Jane. Inspired by the fermentation and distillation process and the parallels to biochemistry, David Perkins decided to create his own distillery. In 2004 he and his family moved to Park City, Utah to start their new business. Distillation began in 2007.
High West American Prairie Bourbon matured in fresh American White Oak (Virgin Oak) casks for an undefined period of time. Bottled at 46 vol. % alcohol, without coloring and not chill-filtered.
Aroma: Delicate sweetness with hints of popcorn, earthy notes and mild spiciness of the oak.
Taste: Sweet with honey and some nougat, spicy with clove, apple and dry wood.
