The High West Distillery was founded in 2006 by David Perkins, a biochemist and his wife Jane. Inspired by the fermentation and distillation process and the parallels to biochemistry, David Perkins decided to create his own distillery. In 2004 he and his family moved to Park City, Utah to start their new business. Distillation began in 2007.
High West Rendezvous Rye matured in fresh American White Oak (Virgin Oak) casks for an undefined period of time. Bottled at 46 vol. % alcohol, without coloring and not chill-filtered.
Aroma: Deep floral with tobacco leaves, pickled cucumber and roasted grains, spicy oak.
Palate: Hints of dark berries and fennel, tree sap and spicy grain.
