The Locher family has been running their brewery in the Appenzell region since 1886. Up until 1999, it was forbidden in Switzerland to make spirits from potatoes or grain. After the law was repealed in 1999, the Locher brewery began producing their own whiskey, which they call Säntis Appenzeller Malt. By default, this matures in oak barrels that previously contained beer.
Säntis Edition Dreifaltigkeit matured in former beer barrels for an undefined period of time. Bottled at 52% ABV. Alcohol, without coloring and not chill-filtered.
Aroma: Smoked bacon and ham, sweet with herbs and spices, dry woody.
Palate: Honey glazed ham, smoked bacon, herbal candy and nutty oak.
