The WhistlePig Distillery was founded in 2008 by Dave Pickerell in Vermont. A year earlier, the team around the owner had acquired a rye farm. Dave Pickerell passed away in 2018. Since then, the distillery has been run by Emily Harrison and Meghan Ireland.
Whistlepig 12 years first matured in fresh American white oak barrels (Virgin Oak) and then received a post-maturation in former port wine, Sauternes and Madeira barrels. Bottled at 43 vol. % alcohol, without coloring.
Aroma: Deep sweetness with honey and preserved fruit, dark dried fruit and dry, spicy oak.
Taste: Aromatic note of rye with mint, sweet honey, dried apricots and figs, dry and spicy.
