The Dictador Solera 12 year old rum is produced in a continuous distillation process in a stainless steel still.
As with most rums, the starting material is a molasses, a residue formed when sugar cane is boiled.
After bottling in casks, the rum ages for 12 years in used oak casks in a solera system.
Several rows of barrels are stacked on top of each other.
The lower casks contain the oldest rum. About a third of this is drained and replaced with younger rum.
When the top row is empty, new rum is refilled. The rum obtained in this way has a strong amber color that tends to reddish.
The aroma is intense with caramel, honey, dry seeds, roasted coffee and oak. The taste is gentle with caramel, cocoa, some coffee and honey as well as traces of oak.
