Hakushu Distillery was established in 1973 in Toribara Village of the former Hakushu City in the forest on the slopes of Mount Kaikoma. Besides Yamazaki, Hakushu is Suntory's second distillery, which focuses on the production of single malt whisky. However, Hakushu uses lightly peated malt, which Yamazaki does not.
Hakushu 12 years matured the entire time in a combination of ex-bourbon and sherry casks, supplemented by fresh casks made from Japanese oak (Mizunara). Bottled at 43 vol. % alcohol, without coloring and not chill-filtered.
Aroma: Fresh with floral notes, light fruits, some sweetness, a hint of peat smoke and spices.
Taste: Fruity with green apples and pears, some vanilla, delicately spicy, slightly smoky, oak.
