Waterford Distillery was founded in 2015 in southern Ireland. A former brewery in the town of Waterford was converted for the distillery. The head behind the distillery is Mark Reynier, who has already made a name for himself through his work at the Scottish distillery Bruichladdich. The former wine merchant approaches the production of his whiskey in a similar way to winemaking: he wants to capture the terroir, the origin-specific character of the barley, within his bottlings.
Waterford Bannow Island Edition 1.2 matured for an undefined period in a combination of ex-bourbon, sweet wine and fresh French oak and American white oak barrels. Bottled at a strong 50% ABV. Alcohol, without coloring and not chill-filtered.
Aroma: Malty with light fruits, citrus and spicy heat, aromatic sweetness.
Palate: Fruity with green apples and unripe pears, peppery with malty sweetness and some oak.
