Waterford Distillery was founded in 2015 in southern Ireland. A former brewery in the town of Waterford was converted for the distillery. The head behind the distillery is Mark Reynier, who has already made a name for himself through his work at the Scottish distillery Bruichladdich. The former wine merchant approaches the production of his whiskey in a similar way to winemaking: he wants to capture the terroir, the origin-specific character of the barley, within his bottlings.

Waterford Ballykilcavan Edition 1.2 matured in a combination of ex-Bourbon, sweet wine and fresh French oak casks for an indefinite period. Bottled at a strong 50% ABV. Alcohol, without coloring and not chill-filtered.

Aroma: Covered floral with earthy notes, delicate sweetness, fruity with berries and some oak.

Taste: Spicy with a pinch of pepper, light dried fruits, green apples and a malty sweetness.
