The Waterford Distillery was founded in the south of Ireland in 2015. A former brewery in the small town of Waterford was converted into the distillery. The man behind the distillery is Mark Reynier, who has already made a name for himself through his work at the Scottish distillery Bruichladdich. The former wine merchant approaches the production of his whiskey in a similar way to wine production: he wants to capture the terroir, the origin-specific character of the barley in his bottlings.
Waterford Sheestown Edition 1.2 matured for an undefined period in a combination of ex-bourbon, sweet wine and fresh French oak casks. Bottled with a strong 50 % vol. Alcohol, without colorant and not chill-filtered.
Aroma: Spicy with earthy notes, sweet fruitiness, floral with hay and straw, herbs.
Taste: Spicy with clove and nutmeg, lemon and pears, sweet with herbal honey and a little oak.
