
High West Distillery was founded in 2006 by David Perkins, a biochemist, and his wife Jane. Inspired by the fermentation and distillation process and the parallels to biochemistry, David Perkins decided to create his own distillery. In 2004, he and his family moved to Park City, Utah, to start their new business. Distillation began in 2007.
High West American Prairie Bourbon matured for an undefined period in fresh American white oak barrels (Virgin Oak). Bottled at 46% alcohol by volume, without colorant and not chill-filtered.
Aroma: Delicate sweetness with hints of popcorn, earthy notes and mild spiciness from the oak.
Taste: Sweet with honey and some nougat, spicy with clove, apple and dry wood.
